Italian Sausage, Sun-Dried Tomato, Farro Bowl
Ingredients
1 package quick-cooking farro
2 cups chopped greens of choice
1 cup riced cauliflower
1/2 onion
1 italian sausage (meatless or meat)
1 cup sun-dried tomatoes
Pantry staples: oil, garlic, spices
Preparation
Dice onion.
Rice cauliflower using a grater or food processor.
Slice sausage.
Soak sun-dried tomatoes in water until re-hydrated.
Saute onion with oil in a large skillet until translucent. Add minced garlic to taste and saute. If using meat, add to the pan and cook through. If using a meat-alternative, skip to next step. Add cauliflower and saute until mostly cooked. Slice sun-dried tomatoes and add to skillet. If using a meat-alternative, add to the pan and heat through. Add greens and wilt. Heat farro in the microwave per package directions and add to the pan. Stir well and serve. Optional: top with cheese of choice (feta, parmesan, ricotta)
