Ingredient: Quick-Cooking Brown Rice

Leftovers Whole Grain Bowl
Ingredients
Roasted vegetables leftover from last night’s dinner plus sauteed greens, leftover protein like chicken or a meat-alternative, and an over-medium egg. Simple, filling, and delicious!

Bibimbap
Ingredients
Hard boiled egg
Kale or your favorite leafy green
Quick-cooking brown rice
Tofu or meat of choice
Sesame oil and sesame seeds

Toppings (use what you have on hand)
Shredded carrots, radish, jicama, kimchi, cucumber, celery

Preparation
Add egg to a pot and cover with water. Bring to a boil. Once boiling, cover and set aside for 15 minutes. While the egg is boiling, saute kale with sesame oil. Heat quick-cooking brown rice and tofu in a separate skillet. If using raw meat, cook ahead of time and then heat rice alongside meat once cooked through. (Tip: marinate tofu with sesame oil and soy sauce prior to cooking and/or buy marinated tofu). Layer sauteed greens with meat and rice mixture. Top with your choice of vegetable toppings, add peeled hard boiled egg, and sprinkle with sesame seeds.
